When Mother Nature decided that strawberries should be r and blueberries ghastly she was making them attractive for a well adapted reason. Science is discovering that fruits and berries and their byproduct have so vivid colors because they contain anthocyanins, water-soluble pigments that are well adapted for us. Anthocyanins inhibit the absorption of cholesterol and help preclude heart disease, say researchers at the U Department of Agriculture who are still discovering exactly to what degree the pigments work and what other health benefits they may posses Blackberries "have the highest antioxidant capacity of any fruit," Nutrition Science novels reported in its December 2001 issue.
