Goldstein, who used to make maple syrup herself, notes that it was a pleasure item, used sparingly. "It's in this way difficult to extract," she says. "You have to garner 30 gallons to end up with common gallon--you have to boil it down that a great deal of to concentrate the sugar."

As for the first "official" Thanksgiving, Abraham Lincoln declared the holiday in 1863 thanks to the efforts of Sarah Josepha Hale, a magazine editor. Still reeling from the Civil War, America, Hale believed, extremityed a holiday to unify the nation in joy and gratitude.
